This energizing and refreshing dish stars the flaky, fatty fish mixed with creamy avocado, spicy red onions, and bright red peppers. Dressed in an electric mix of lemon juice and smooth olive oil, Chopped Salmon Salad invigorates and satisfies with its delicious taste. You'll be doing salmon leaps of joy once you have a bite!


For the salad: • 8 ounces salmon, cooked and flaked • 3 cups cucumber, chopped • 3 cups red bell peppers, chopped • 3/4 cup red onions, chopped • 1 medium avocado, chopped • 4 cups lettuce, chopped For the dressing and garnish: • 1 1/2 tablespoons lemon juice, freshly squeezed • salt, to taste • fresh ground black pepper, to taste • 3 tablespoons extra virgin olive oil • 1 tablespoon fresh parsley, chopped


Step 1

In a large salad bowl, add the salmon, cucumber, red bell peppers, red onions, avocado, and lettuce, mixing everything until combined.
