For the crust: • 5 cups pretzels, crushed • 8 tablespoons butter, melted • 1/3 cup brown sugar For the pie filling: • 1/4 cup cornstarch • 1 1/2 cups sugar • 1/4 cup teaspoon salt • 4 egg yolks • 3 cups milk • 7 ounces bittersweet chocolate, chopped • 2 teaspoons vanilla extract • 2 tablespoons butter • 2 tablespoons lemon juice


Step 1

In a medium bowl, combine the pretzels, melted butter, and brown sugar.

Press the pretzel mixture into a 9-inch pie pan.

Bake the pie crust until golden, about 10 minutes.

Let the pie crust cool to room temperature.

In a medium saucepan, whisk the cornstarch, sugar, and salt.

Mix the egg yolks and milk into the sugar mixture.

Heat the egg yolk mixture over medium heat.

Gently mix the pie filling until it thickens like a pudding, about 6-8 minutes.

Transfer the filling away from the heat and immediately add the chocolate, vanilla, butter, and lemon juice. Mix until the ingredients are incorporated into a smooth pudding texture.
