Ingredients• 1 cup all-purpose flour • 1/4 cup cocoa powder • 1/2 teaspoon salt • 5 large eggs, yolks and whites separated • 1 cup butter, unsalted • 1 cup sugar, granulated • 1 teaspoon vanilla extract
Preheat the oven to 350 degrees F.
Spray a loaf pan generously with cooking spray.
Mix the flour, cocoa powder, and salt together in a bowl.
In a separate bowl, whisk the egg whites until stiff peaks form.
In another bowl mix the butter with the sugar until well combined and creamy.
Mix in the egg yolks and vanilla until well combined.
Add half the dry ingredient mixture and half the egg whites, folding until combined.
Add the remaining flour mixture and mix well. Fold in the remaining egg whites with a spatula. Do not over-mix!
Transfer the batter to the prepared loaf pan and bake until a toothpick inserted into the center comes out clean, about 1 hour.
Let the cake cool in the loaf pan for about 15 minutes.
Run a knife around the sides of the loaf pan to loosen the cake in case it’s stuck and turn it over onto a cooling rack.
Turn it upright and allow it to cool completely before slicing.
