Chinese Chicken Salad

Ingredients

For the salad: • 2 cups shredded romaine lettuce • 2 cups shredded Napa cabbage • 2 cups shredded red cabbage • 2 large carrots, julienned (about 1 cup) • 1 cup shelled edamame • 3 cups shredded chicken (about 1 1/2 pounds chicken) • 3-1/2-ounce bag crunchy wonton noodles • 1 cup mandarin orange slices, drained • 1 bunch scallions, diced (about 1/2 cup) • 1/2 cup sliced almonds For the dressing: • 1/4 cup grapeseed oil (or any other neutral-flavored oil) • 2 tablespoons sesame oil • 2 tablespoons rice wine vinegar • 2 tablespoons soy sauce • 1 tablespoon brown sugar • 1 teaspoon ginger, minced • 1 teaspoon garlic, crushed • 1 teaspoon chili-garlic sauce • 1/4 teaspoon salt and pepper

Directions

Step 1

Combine the romaine, Napa cabbage, red cabbage, carrots, edamame, shredded chicken, and wonton noodles in a large salad bowl.

Step 2

Gently toss in the oranges, scallions, and sliced almonds.

Step 3

Whisk together the ingredients for the dressing in a bowl, then toss the salad with the dressing. Serve and enjoy!
