Ingredients• 4 cups low-sodium chicken broth • 3 chicken breasts, boneless and skinless • 2 poblano peppers, chopped • 1 white onion, chopped • 2 cloves garlic, minced • 1 tablespoon cumin • 1 tablespoon oregano • 2 teaspoons chili powder • 2 teaspoons kosher salt • freshly ground black pepper, to taste • 2 (15 ounce) cans hominy, drained • radishes, optional, thinly sliced, for garnish • green cabbage, optional, sliced, for garnish • fresh cilantro, optional, for garnish
Place the chicken broth, chicken, poblano peppers, onion, garlic, cumin, oregano, chili powder, salt, and pepper into the slow cooker.
Cook on low until the chicken is tender and cooked through, about 6-8 hours.
Take the chicken out of the slow cooker and shred it with two forks.
Return the chicken to the slow cooker along with the hominy and cook for another 30 minutes.
Serve the soup in bowls and garnish with the radish, cabbage and cilantro.
