• 1 1/2 cups white rice • 8 slices bacon, cooked and chopped • 1/2 onion, finely chopped • 3 chicken breasts, boneless, skinless, and cut into bite-sized pieces • 2 tablespoons olive oil • 2 tablespoons ranch seasoning • 2 1/4 cups chicken broth • 1/4 cup heavy cream • 1 cup cheddar, shredded • 1/2 cup mozzarella, shredded • 2 teaspoons parsley, optional, chopped, or sprigs of rosemary, optional, to taste


Step 1

Preheat the oven to 350 degrees F.

Into a 9x13-inch baking dish, combine the rice, bacon, and onions.

Drizzle the chicken breasts with the olive oil and season all over with the ranch seasoning.
