Ingredients• 2 tablespoons butter • 1 small onion, chopped • 3 cloves garlic, minced • 2 cups frozen shredded hash brown potatoes, thawed • 3/4 teaspoon salt, divided • 1 cup Jarlsberg cheese, shredded • 1 (1.5-pound) beef top sirloin steak, 1-inch thick and cut into 4 portions • 1/2 teaspoon pepper • 2 tablespoons fresh chives, minced
Preheat the grill to medium heat.
In a large skillet, heat the butter over medium-high heat.
Add the onion and cook until tender, about 2-3 minutes.
Add the garlic and cook until golden, about 2 minutes.
Stir in the hashbrowns and 1/4 teaspoon salt, spreading both in an even layer in the skillet.
Reduce the heat to medium and cook for 5 minutes undisturbed.
Flip the hashbrowns and cook, covered, until heated through and the bottom is lightly browned, for about 5-6 minutes.
Sprinkle the Jarlsberg cheese over the top of the hash browns.
Cover the hashbrowns and keep warm, off of the heat.
Season the beef with the remaining 1/2 teaspoon salt and pepper.
Grill the beef until it reaches the desired level of doneness, reading 135 degrees F for medium-rare, 140 degrees F for medium, and 145 degrees F for medium-well when tested with a meat thermometer, about 5-7 minutes on each side.
Remove the steaks from the heat and top each portion with 1/4 of the hashbrowns.
Garnish with the chives and serve.
