• 2 pounds ground beef • 2 medium onions, chopped • 2 garlic cloves, minced • 3 (10-ounce) cans diced tomatoes and green chiles, undrained • 1 (28-ounce) can diced tomatoes, undrained • 2 (4-ounce) cans chopped green chiles • 1/2 teaspoon black pepper • 2 pounds Velveeta, cubed • sour cream, optional, for serving • sliced jalapeño pepper, optional, for serving • tomatoes, chopped, optional, for serving • fresh cilantro, minced, optional, for serving


Step 1

In a large saucepan, cook the ground beef, garlic, and onions for 5-7 minutes, until the meat is no longer pink.

Step 2

Crumble the meat and then drain the excess liquid from the pan.

Step 3

Mix in the tomatoes, pepper, and chiles, then bring to a boil.

Step 4

Reduce the heat and let simmer, uncovered, for 10-15 minutes.

Step 5

Stir in the Velveeta cheese until fully melted.

Step 6

Top with jalapeños, sour cream, tomatoes, and cilantro, if desired.

Step 7

Serve immediately.
