Ingredients• 3 cups shell noodles, uncooked • 3 tablespoons butter • 1 onion, finely diced • 1/3 cup red bell pepper, diced • 1/2 teaspoon seasoning salt • 1 teaspoon chili powder • 10 3/4 ounces condensed cream of chicken soup • 1 1/3 cups milk • 3 cups sharp cheddar cheese, shredded and divided • 1/3 cup parmesan cheese, shredded • 3 cups chicken, cooked • 4 ounces mild green chiles
Preheat the oven to 375 degrees F.
Cook the pasta to al dente according to package directions.
In a skillet over medium heat, cook the onion and red bell pepper until tender and the onion is translucent, about 5 minutes.
Add the seasoning salt and chili powder, stirring to combine.
In a mixing bowl, combine the soup, onion mixture, milk, 2 cups of the cheddar cheese, and the parmesan cheese, mixing well.
Stir in the chicken, cooked pasta, and green chiles.
Pour the mixture into a 9x13-inch baking dish, spreading it evenly.
Top with the remaining cheese.
Bake until bubbly, about 30-35 minutes.
