Ingredients• olive oil, for greasing • 2 cups marinara sauce • 1/3 cup mascarpone cheese • 1/4 cup fresh Italian parsley leaves, chopped • 2 teaspoons fresh thyme leaves, chopped • 1 pound cheese tortellini • 2 ounces smoked mozzarella, thinly sliced • 1/4 cup parmesan, freshly grated
Preheat the oven to 350 degrees F.
Lightly grease an 8x8-inch baking dish with olive oil.
Whisk the marinara sauce, mascarpone cheese, parsley, and thyme in a large bowl until blended.
Cook the tortellini according to the package directions until just tender, about 2 minutes.
Drain the pasta and add it to the sauce, tossing to coat.
Transfer the tortellini mixture to the prepared baking dish.
Top the mixture with mozzarella and parmesan.
Cover the baking dish and bake until the cheese melts and the sauce is bubbly, for about 30 minutes.
