• olive oil, for greasing • 2 cups marinara sauce • 1/3 cup mascarpone cheese • 1/4 cup fresh Italian parsley leaves, chopped • 2 teaspoons fresh thyme leaves, chopped • 1 pound cheese tortellini • 2 ounces smoked mozzarella, thinly sliced • 1/4 cup parmesan, freshly grated


Step 1

Preheat the oven to 350 degrees F.

Lightly grease an 8x8-inch baking dish with olive oil.

Step 3

Whisk the marinara sauce, mascarpone cheese, parsley, and thyme in a large bowl until blended.

Cook the tortellini according to the package directions until just tender, about 2 minutes.

Drain the pasta and add it to the sauce, tossing to coat.
