One of cauliflower’s greatest strengths is its mildness; it blends easily into other flavors, letting them take center stage. Cauliflower in Cheese Sauce thus lets the melty, rich, creamy cheese sauce take the lead, so you won’t notice you're eating your greens with this dish! Hearty, healthy, and hot, Cauliflower in Cheese Sauce is an incredible vegetable side. Try it with cheddar for a classic feel or gouda for a bold creamy flavor!

• 1 head cauliflower, trimmed, rinsed, and cut into 4 pieces • 2 tablespoons butter • 2 tablespoons flour • 1 cup milk • 4 ounces cheese, of your choice, grated and separated • 1/4 teaspoon salt • 1/4 teaspoon black pepper • 1/4 teaspoon nutmeg
