Fire up the grill for taco night. Marinating the flank steak for a few hours in Mexican-inspired flavors makes the beef super tender and delicious. Carne Asada Tacos calls for simple toppings, but feel free to add what your heart desires, like salsa or pickled onions. Carne Asada Tacos are delicious enough to make you swear off restaurant fajitas for the foreseeable future.

For the carne asada: • 1/3 cup olive oil • 3 limes, juiced • 1/2 cup fresh cilantro, optional, chopped • 4 cloves garlic, minced • 1 teaspoon cumin powder • 1/2 teaspoon chili powder • salt, to taste • pepper, to taste • 1 1/2 pounds flank steak For the tacos: • 2 avocados • 6 tortillas • 3 tablespoons cotija cheese • 1/3 cup onion, finely diced • 1/2 cup fresh cilantro, chopped • limes, for garnish

Step 1

In a small bowl, whisk together the olive oil, lime juice, cilantro, garlic, cumin, chili powder, salt, and pepper together to make the marinade.

Step 2

Add the flank steaks to a glass or non-stick lipped tray or in a zipped plastic bag and pour the marinade on top. Ensure the steaks are well coated.

Step 3

Cover or zip up and allow the meat to marinate for 1-4 hours.

Step 4

When the meat is finished marinating, preheat the grill on medium-high heat.

Step 5

Grill the carne asada to the desired doneness, 120-125 degrees F internally for medium-rare.

Step 6

Slice the carne asada against the grain and then chop it. Slicing it against the grain shortens the muscle fibers and results in a more tender chew.

Step 7

Mash the avocados with a spoon or fork. Spread a spoonful of avocado onto a tortilla.

Step 8

Top the avocado with the carne asada, cotija cheese, diced onion, and fresh cilantro.

Step 9

Serve with fresh lime juice!
