Here's a grilled chicken to get you dancing! Can-Can Chicken uses beer straight from the can (hence the name) to steam the meat, keeping it moist and infusing it with malty, roasted flavors. Ingredients
• 1 tablespoon kosher salt • 1 teaspoon sugar • 1 teaspoon onion powder • 1 teaspoon garlic powder • 1 teaspoon cayenne pepper • 1 teaspoon paprika • 1 teaspoon ground mustard • 1 (3.5-4-pound) broiler/fryer chicken • 1 (12-ounce) can of beerDirections
In a small bowl combine the salt, sugar, onion powder, garlic powder, cayenne pepper, paprika, and mustard.
Carefully loosen the skin from the chicken, mindful not to tear it or remove it.
Rub the seasoning mixture under and over the skin of the chicken.
Tuck the wings under the chicken.
Cover and refrigerate for 1 hour.
Preheat the grill on medium heat.
Completely cover all sides of a 9-inch baking dish with foil.
Securely place a beer can chicken rack in the baking pan.
Remove half the beer from the beer can and create additional openings in the top of the can.
Place the can in the rack.
Stand the chicken vertically on the rack.
Place the rack on the grill rack.
Grill the chicken, covered, over indirect heat until a meat thermometer inserted into the thickest part reads 165 degrees F, about 75-90 minutes.
Carefully remove the chicken and rack from the grill.
Tent the chicken with foil.
Let the chicken stand for 15 minutes.
Carve and serve.
