Cajun Cabbage roasts cabbage to its tenderest and sweetest form and mixes it with melty, sharp Colby cheese. • 1 pound of ground beef • 1 medium green pepper, chopped • 1 medium onion, chopped • 2 cloves garlic, minced • 1 (10-ounce) can of diced tomatoes and green chiles • 1 (8-ounce) can of tomato sauce • 1/2 cup long-grain rice • 1 teaspoon salt • 1/2 teaspoon dried basil • 1/2 teaspoon dried oregano • 1/4 teaspoon white pepper, plus more to taste • 1/4 teaspoon black pepper, plus more to taste • 1/4 teaspoon cayenne pepper, plus more to taste • hot pepper sauce, to taste • 1 small head cabbage, chopped • 1 cup Colby cheese, shredded • fresh basil, optional, for garnish


Step 1

Preheat the oven to 350 degrees F.

Step 2

In a skillet, cook the beef, green pepper, onion, and garlic over medium heat until the meat is no longer pink, about 6-8 minutes.

Step 3

Drain the fat from the skillet.

Step 4

Stir in the tomatoes, tomato sauce, rice, salt, basil, oregano, white pepper, black pepper, cayenne pepper, and hot sauce.

Step 5

Spread the mixture into an ungreased 9x13-inch baking dish.

Step 6

Top the beef mixture with the cabbage and the Colby cheese.

Step 7

Cover and bake until the rice is tender, about 65-75 minutes.

Step 8

Garnish with fresh basil and serve.
