Add the lemon juice, honey, mustard, 1/2 teaspoon salt, 1/8 teaspoon pepper, and garlic to a medium bowl, whisking to combine.
Slowly whisk in 1/2 cup olive oil until emulsified.
Season the dressing to taste and set aside.
Preheat the oven to 325 degrees F.
Add 1 tablespoon olive oil and the melted butter to a large bowl.
Add the cubed bread and mix until evenly coated.
Sprinkle the soaked bread cubes with 1/2 teaspoon salt, the garlic powder, and 1/8 teaspoon pepper, mixing to evenly combine.
Spread the croutons on a large rimmed baking sheet.
