• 2 tablespoons butter • 2 tablespoons all-purpose flour • 1 cup milk • 3/4 cup Swiss cheese, shredded • 1/4 teaspoon salt • 2 sheets puff pastry • 18 eggs • 1-2 cups ham, diced • 1 egg, beaten, for egg wash For the optional toppings: • chives, to taste, chopped • salt, to taste • pepper, to taste

Step 1

Preheat the oven to 375 degrees F.

Step 2

Melt the butter in a small saucepan over medium heat.

Step 3

Add in the flour and whisk to combine. Pour in the milk, little by little, whisking after each addition.

Step 4

Bring the mixture to a simmer, whisking until the mixture thickens.

Step 5

Take the mixture off the heat and stir in the cheese.

Step 6

Season the mixture with salt, and set it aside.

Step 7

Using a rolling pin, roll out the puff pastry sheets until they are thin.

Step 8

Cut each pastry sheet into 9 equal squares, making 18 total.

Step 9

Line each well of a muffin tin with one puff pastry square, pressing it firmly to the bottom and sides. The edges should come just over the top of the muffin tin.

Step 10

Fill each cup with a spoonful of the cheese sauce.

Step 11

Crack one egg into each cup and sprinkle the diced ham on the top of each egg.

Step 12

Brush the exposed portions of the puff pastry with the egg wash.

Step 13

Bake until the eggs are set, about 10-15 minutes.

Step 14

Sprinkle the cups with the chives, salt, and pepper.

Step 15

Serve warm.
