Ingredients• 2 cups packed dark brown sugar • 1 cup (2 sticks) salted butter, softened • 2 teaspoons vanilla extract • 2 eggs • 1 1/2 cups all-purpose flour • 1 teaspoon salt • 1/2 teaspoon baking soda • 3 cups old-fashioned oats
Preheat the oven to 350 degrees F.
In the bowl of a stand mixer, beat the butter and brown sugar together until fluffy.
Beat in the vanilla extract.
Add in the eggs one at a time, scraping the bowl after each one.
Mix together the salt, flour, and baking soda in a separate medium bowl.
Add the flour mixture into the creamed mixture in 2-3 batches, mixing until just combined each time.
Then, mix in the oats until just combined. Be careful not to overmix.
Using a cookie scoop or a spoon, place portions of the dough onto baking sheets, spacing them a couple of inches apart.
Bake until dark and chewy, about 12-13 minutes.
Let the cookies slightly cool before serving.
