It would be foolish not to love this dessert! While the origins of its unusual name aren't clear, no one can debate a fundamental truth about British Fool; combining fresh, tart, bright berries with fluffy, creamy homemade whipped topping is a winning and refreshing treat! Ready in just 30 minutes, easy to make, and requiring only a blender and a bowl, British Fool proves that a simple and sweet dessert can win over just about anyone! This dessert is pure gold, not fool's gold!


• 1 pint of strawberries • 1/2 cup sugar, plus more to taste, divided • 1 cup heavy cream • 1 teaspoon vanilla extract, optional


Step 1

Hull and wash the strawberries.

Step 2

Chop the strawberries into 1/4-inch-thick pieces.

Step 3

Toss with 1/2 of the sugar and allow the strawberries to release their juices, stirring only occasionally, for about 10 minutes.

Step 4

Place 1/2 of the strawberries and all of the released juices into a blender and purée.

Step 5

Pour the purée back into the bowl with the remaining strawberries.

Step 6

Combine the cream, vanilla extract, and remaining sugar in a bowl.

Step 7

Whip the cream mixture until the cream is stiff and holds peaks easily.

Step 8

Fold the berries and cream together.

Step 9

Serve immediately.
