Ingredients• 1 large egg, room temperature • 1/3 cup extra virgin olive oil • 2/3 cup milk • 1 1/2 cups tapioca flour • 1/2 cup cheese, grated, of your preference • 1 teaspoon salt, or more to taste
Preheat the oven to 400 degrees F.
Grease the wells of a muffin tin.
Put all of the ingredients into a blender and pulse until smooth and thoroughly combined.
Pour the batter into the wells of a muffin tin, being careful to leave about 1/8 inch of space at the top.
Bake the batter until puffy and browned, for about 15-20 minutes.
Remove from the oven and let cool for a few minutes.
