Ingredients• water, for boiling • 2 pounds baby carrots • 1/2 cup unsalted butter • 1/4 cup honey • 1/4 cup brandy • 1/4 teaspoon salt or to taste • 1/4 teaspoon pepper or to taste • 1 tablespoon parsley, fresh, chopped for garnish (optional)
Using a large skillet, bring about a 1/2 inch of water to a boil on the stove-top.
Mix in the carrots, then cover and cook them until they are crispy-tender, around 7-9 minutes.
Drain the carrots and set them aside.
Using the same skillet, cook the butter and honey over medium heat until the butter is melted.
Mix in the brandy and bring the mixture to a boil.
Cook the glaze until it has reduced to about 1/2 cup.
