Ingredients• 2 corn tortillas • 1 tablespoon onions, chopped • 1 tablespoon bell peppers, chopped • 1/4 teaspoon cumin • 1 teaspoon cilantro, chopped • 1/2 cup canned black beans, rinsed and drained • 3/4 ounce low-fat cheddar cheese • 1 tablespoon light sour cream • 1 tablespoon salsa
Spray a skillet with cooking spray.
Saute the onions and the peppers in a pan over medium heat until they are tender, about 5 minutes.
Add in the black beans, cumin, and cilantro, making sure that the beans are warmed through.
Transfer the bean mixture to a mixing bowl.
Put one of the tortillas into a skillet.
Add in the bean mixture, cheese, and another tortilla on top.
Heat the tortilla until it starts to crisp on both sides, flipping so that each side gets crisp, about 2 minutes per side.
Move the quesadilla to a plate, cut it into wedges and serve warm with the sour cream and salsa.
