• 2-3 pounds roast or eye round cut, fat trimmed • 3-4 cloves garlic, thinly sliced • olive oil, for brushing • kosher salt, to taste • fresh cracked pepper, to taste • 2 teaspoons dried rosemary, chopped


Step 1

Allow the roast to sit, covered, until it reaches room temperature, about 1 hour.

Step 2

Preheat the oven to 350 degrees F.

Step 3

Using a sharp knife, pierce the roast several times, making each piercing about 1/2-inch deep and set about 1-inch apart.

Roast until the thermometer reads 130 degrees F for rare, 140 degrees F for medium-rare, 150 degrees F for medium, and 155-160 degrees F for well done, about 1 hour-1 hour 15 minutes.

Step 8

Remove the roast from the oven and let it rest for about 10-20 minutes.

Step 9

Slice thin and serve.
