Ingredients• 3-4 pounds chuck roast OR 3-4 pounds beef brisket • 1 large white onions, chopped • 1 cup ketchup • 1 envelope dry onion soup mix • 1/2 cup water
Preheat the oven to 350 degrees F.
Use aluminum foil to line awalled roasting pan and coat with cooking spray or very lightly with olive oil.
Place the cut of meat in the pan, combine all ingredients together in a bowl and mix, and pour over beef.
Cover the roasting pan with aluminum foil and bake for 2 3/4 to 3 1/4 hours or when internal temperature reaches 165 to 170 F. Remove from oven and let rest covered for 10 minutes. Slice and enjoy with your favorite sauce and sides!
