Ingredients• 2 tablespoons olive oil, divided • 2 pounds chuck or stew meat, cubed • salt, to taste • pepper to taste • 1 onion, chopped • 10 1/2 ounces beef broth • 10 1/2 ounces French onion soup • 1 tablespoon Worcestershire sauce • 1 bay leaf • 3 tablespoons cornstarch mixed with 1/3 cup cold water, optional, for thickening the gravy • mashed potatoes, optional, cooked, for serving
Using a large pot or a Dutch oven, heat up 1 tablespoon of the olive oil over a medium-high temperature.
Season the beef with the salt and pepper.
Add the meat into the pot, cooking it in small batches and removing it when the beef is browned and tender, about 5 minutes for each cube. Set the meat aside.
Reduce the heat to medium.
Add in the remaining 1 tablespoon of olive oil and the onion and cook until the onion has completely softened, about 7-10 minutes.
Add the cooked beef, beef broth, French onion soup, Worcestershire sauce, and the bay leaf into the large pot.
Bring the mixture to a boil.
Cover the pot and reduce the heat.
Allow the mixture to simmer until the beef is tender and juicy, about 1 1/2-2 hours.
Taste the gravy for seasoning and for thickness. If the gravy is too thin, add the cornstarch mixture a little at a time until it reaches the desired consistency.
Remove and discard the bay leaf.
Serve the dish over mashed potatoes.
