Ingredients• 2 cups water • 3 tablespoons butter • 1 (4 ounce) package roasted garlic mashed potato mix • 3/4 cup sour cream • 1 1/2 cups cheddar cheese, shredded and divided • 3 cups rotisserie chicken, cooked and chopped • 1 (12 ounce) bottle barbeque sauce, of your choice • 1/2 cup green onions, chopped, divided • 6 slices bacon, crisply, cooked, and crumbled
Preheat the oven to 350 degrees F.
Prepare a 2-quart baking dish by spraying it with cooking spray.
Bring the water and butter to a boil in a large saucepan on the stove top.
Remove the saucepan from the heat.
Stir in the mashed potato mix.
Add in the sour cream and 1 cup of the cheese, stirring until fully incorporated.
Spoon the mashed potato mixture into the prepared baking dish.
Combine the chicken, barbeque sauce, and 1/4 cup of the green onions in a large mixing bowl.
Spoon the chicken mixture over the potatoes.
Top the casserole with the bacon and the remaining cheese.
Place the dish in the oven and bake until the cheese is melted and the edges are bubbling, about 20-25 minutes.
Garnish with the remaining 1/4 cup of the green onions and serve hot.
