Follow singer-songwriter Jack Johnson’s lead and make Banana Pancakes “and pretend like it’s the weekend.” When the bananas hit the griddle they caramelize and sweeten even more, adding a great depth of flavor to the already delicious pancakes. Banana Pancakes are a decadent way to enjoy breakfast on the weekend—or on a weekday, for that matter. We won’t tell.
Ingredients
• 1 cup flour • 1 tablespoon granulated sugar • 2 teaspoons baking powder • 1/4 teaspoon table salt • 1 egg • 1 cup milk • 2 tablespoons vegetable oil • 2 bananas, sliced thinDirections
Step 1
Combine the flour, sugar, baking powder, and salt.
Step 2
In a separate bowl, mix together the egg, milk, vegetable oil, and bananas.
Step 3
Stir the flour mixture into the banana mixture; the batter will be and should be slightly lumpy.
Step 4
Heat a lightly oiled griddle or frying pan over medium-high heat on the stove-top.
Step 5
Pour or scoop the batter onto the griddle, using approximately 1/4 cup for each pancake.
Step 6
Cook until pancakes are golden brown on both sides.
Step 7
Serve hot.
