Ingredients• 1/4 teaspoon salt, or to taste • 1/4 teaspoon pepper, or to taste • 3 medium zucchini, cut into sticks • 1 cup breadcrumbs • 1/2 cup parmesan cheese, grated • 1 egg • ranch dressing, optional, for serving
Preheat the oven to 425 degrees F.
Use parchment paper to cover a baking sheet.
Beat the egg in a shallow bowl or plate and season with salt and pepper.
In another shallow bowl or plate, combine the breadcrumbs together with the parmesan cheese and season it with salt and pepper.
Dip each zucchini stick in the egg wash, and then roll in the breadcrumb mixture. Cover each stick fully with breadcrumbs by rolling.
Place the coated sticks on the prepared baking sheet.
Transfer the baking sheet to the oven and bake until golden and crispy, about 20-25 minutes. Serve with the ranch dressing.
