Ingredients• 5 strips bacon, thick-cut and chopped • 1 mango, peeled and diced • 4 cups white rice, cooked and day-old • chives, optional, for garnish
In a large skillet over medium heat, saute the chopped bacon until nearly crisp, about 5-7 minutes.
Transfer the bacon to a paper-towel-lined plate.
Remove all but 2 tablespoons of fat in the pan.
Add the mango to the skillet and saute until caramelized, about 2-3 minutes.
Stir in the rice and the bacon until well combined and warm.
Serve with the chives.
