• 1 tablespoon vegetable oil • 2 chicken breasts, sliced into thin strips • salt, to taste • pepper, to taste • 4 tortillas • 4 teaspoons mayonnaise • 3 cups spring mix • 2 tomatoes, sliced • 1 red onion, sliced • 2 avocados, sliced • 2/3 cup cheddar cheese, shredded


Step 1

In a medium skillet over medium heat, heat the oil.

Step 2

Add the chicken and season as desired. Cook each side until golden and cooked through, with no pink remaining, about 5-7 minutes.

Step 3

Set the chicken aside.

Step 4

In the same skillet, let a tortilla warm and soften for 10 seconds. Repeat with all the tortillas.

Step 5

Spread the mayonnaise on the tortilla, followed by the spring mix, tomatoes, red onion, avocado, cooked chicken, and cheese.

Step 6

Enjoy while warm!
