Ingredients• 3 cups all-purpose flour, plus more for dusting a work surface • 1/2 cup sugar • 1 1/2 teaspoons baking powder • 2 teaspoons ground cardamom • 1/2 teaspoon kosher salt • 1 egg, beaten • 13 1/2 ounces coconut milk • oil, to taste, for frying
Whisk together the flour, sugar, baking powder, cardamom, and salt in a large bowl.
Make a well in the center of the dry ingredients mixture.
Add the egg and coconut milk to the well.
Use a rubber spatula to mix in the egg and coconut milk until the dough comes together.
Dust a work surface with flour.
Turn the dough out onto the floured surface and knead it until it is smooth.
Divide the dough into 4 portions.
Roll out 1 portion of the dough into a circle about 1/4-inch thick.
Cut the dough circle into 8 triangles.
Repeat the same process with the remaining dough portions.
Heat the oil in a large pot until it reaches 350 degrees F.
Working in batches, fry the mandazi until they are golden brown, about 2-3 minutes per side.
Drain the mandazi on paper towels.
Dust the mandazi with powdered sugar and serve.
