Ingredients• 1 3/4 cups self-rising cornmeal mix • 1 1/2 cups self-rising flour • 1 1/2 cups yellow cornmeal • 2 teaspoons baking powder • 1/2 teaspoon salt • 1/2 teaspoon garlic powder • 3/4 teaspoon cayenne pepper • 1 1/2 cups milk • 3/4 cup buttermilk • 1 egg, beaten • 1/2 cup onions, minced • 1/4 cup canned diced jalapeno peppers • vegetable oil, for frying
In a large mixing bowl, combine the cornmeal mix, flour, yellow cornmeal, baking powder, salt, garlic powder, and cayenne pepper.
Add the milk, buttermilk, and egg and mix until blended.
Stir in the onion and jalapeno peppers.
Heat the vegetable oil in a large skillet on the stove-top until it reaches 370 degrees F.
Carefully drop the batter by level tablespoonfuls into the hot oil.
Fry, turning once during the cooking process, until the hushpuppies are golden brown, about 3-5 minutes.
Drain on paper towels.
