• 2 large chicken breasts, boneless, skinless • vegetable oil, for pan-frying • 1/3 cup lemon juice • 1 1/2 cups seasoned breadcrumbs • lemon pepper, to taste

Slice the breasts in half, resulting in 4 thin chicken pieces.

Place a foot of plastic wrap on the counter and lay the chicken on top.

Cover the chicken with an additional piece of plastic wrap.
