IngredientsFor the fajita seasoning: • 1 teaspoon cumin • 1/2 teaspoon chili powder • 1/2 teaspoon garlic powder • 1/2 teaspoon onion powder • 1/2 teaspoon paprika • salt, to taste • pepper, to taste • 1–1 1/2 pounds chicken breasts, boneless, skinless, and cut into small thin strips • 1 lime, juiced • 2 tablespoons olive oil, divided • 2 green bell peppers, cored and thinly sliced • 1 medium red onion, thinly sliced • small flour or corn tortillas, for serving
Combine all of the cumin, chili powder, garlic powder, onion powder, paprika, salt, and pepper together in a small bowl, reserving 1/2 teaspoon to be used while cooking the bell pepper and onion and the remaining seasonings for the chicken.
In a large bowl, toss the chicken with the lime juice and the fajita seasoning.
In a large cast-iron skillet, heat 1 tablespoon of the oil over medium-low heat.
Add the peppers, onions, and reserved 1/2 teaspoon of the fajita seasoning.
Cook until tender and slightly charred, about 5-7 minutes.
Transfer the veggies to a plate and set them aside.
Add the remaining 1 tablespoon of the olive oil to the same skillet and turn up the heat to medium.
Cook the seasoned chicken until golden on the outside and fully cooked through, reading 165 degrees F when checked with a meat thermometer, about 5 to 7 minutes.
Return the bell peppers and onions back to the skillet once the chicken is fully cooked to heat everything through.
Serve immediately with tortillas and desired toppings.
